I'M SO SORRY, MY SWEETIE!

My Great Great Grandma's handwriting is so hard to read, and these eyes of mine aren't what they used to be.  So I wrote down too much cocoa!  Instead of 12 tbsp of cocoa, just use 6 tbsp.  Twice as much cocoa makes the cake very bitter.  So now the recipe below is correct! (and once again, truly YUMMY!)

 Mmmm... CRAZY CAKE!

Here is Gram's CRAZY CAKE recipe for
MOIST, DELICIOUS chocolate cake...

3 cups flour 12 tbsp oil (2/3 cup)
2 cups sugar 2 tbsp vinegar
2 tsp baking soda 2 tbsp vanilla
1 tsp salt 2 cups water
6 tbsp cocoa (1/3 cup) Y U M !

It's called a "CRAZY CAKE", my sweetie, because my Great Great Grandma used vinegar (You CANNOT taste it after baking!) for a more moist, luxurious and delicious texture, and there are no eggs nor milk in the recipe!

Okay now, this mouthwatering recipe makes two (2) cake layers, or you can use an 8 x 11 inch baking dish.  Use a large spoon and mix the dry ingredients in a large bowl.  Then make one large hole and two small holes in the dry mixture.  Pour the vegetable oil into the large hole, the vanilla in one small hole and the vinegar in the other small hole.  Pour the water slowly over the top just as you begin mixing.  I like to use a large spoon to mix all the ingredients.  Butter and flour your baking pan(s) before you pour in the batter, and use a spatula to get all the batter into the pan (just one more thing to lick!).  You won't taste the vinegar in the mix nor after baking, but it certainly will make your CRAZY CAKE a lot more moist than anybody else's!

If you use an electric mixer, then be sure to use low or medium speed.  And mix for a very short time only, or there will be too many bubbles in the mix.  Too many bubbles means your cake might fall.  We don't want that to happen, now do we?

Bake at 350 degrees.  After 30 minutes or so, use a wooden toothpick to make sure your cake is done.  Poke the toothpick into the cake near the center, then pull it out.  If there still is batter on the toothpick, then bake a little longer.  When the toothpick comes out clean, then your CRAZY CAKE is done!

After your cake layers cool, you can frost them with your favorite icing.  This cake is so moist that I've been known to enjoy it without any icing.  And my sweetie, you know that's up to you, of course.
